Good Onya recipe of the month – Aussie lamb carnitas

In Aussie speak, “Good Onya” (as in “good on you”) is how you say “nice job!” or “well done!” We’ve been seeing some fantastic Aussie grassfed beef and lamb recipes on the web lately, and are highlighting just one (!) every month or so in this space, as a place to give a Good Onya shout-out to a deserving blogger or IG superstar.

This month, we’d like to give some love to our mate and all-around queen of the taco Chef Michelle Lainez. She’s been rocking it with lamb tacos lately, from a Lamb carnitas with habanero-cabbage slaw and peanuts, to another with Wine braised Aussie lamb shank with yellow curry crema and dried cherries.

But this little number looked so good on her IG feed that we had to link to it here. It’s got all of Michelle’s keys to great tacos: high-quality meat (Aussie, of course), really good corn tortillas, a bit of spiciness, and a little bit of acidity from the pickled cranberries.
