It's three meals in one! Start with the Aussie lamb spin on sloppy Joes, and then stretch it into 2 more meals.

Ingredients

1 pound ground Australian lamb

1 tablespoon extra virgin olive oil

½ cup sweet onion, minced

¼ cup carrot, minced

¼ cup celery, minced

1 clove of garlic, minced

2 tablespoons flour

1 ½ cups vegetable broth

½ teaspoon dried thyme

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon Kosher salt

1 teaspoon Vegemite (optional)

4 each sandwich buns, toasted

Crispy onions (such as French’s), for garnish

Method

 

In a large skillet over MEDIUM-HIGH heat, add oil, onion, carrot, celery and garlic. Cook until vegetables are tender - about 5 minutes.

Add lamb and cook until browned throughout- about 7 minutes. Use a spatula or potato masher and break into small pieces while cooking.

Reduce heat to MEDIUM-LOW, stir in the remaining ingredients and bring to a simmer. Continue cooking until thickened- about 20 minutes. Stir occasionally.

To serve:

Scoop desired amount of the sloppy joey mixture on top of the toasted buns. Garnish with crispy onions and serve with your favorite side dish.

Cheesy Aussie Lamb Quesadillas

In a large non-stick skillet over MEDIUM-HIGH heat, place shredded cheddar cheese directly onto skillet.

Press down cheese with a flour tortilla and fill with more cheese and the sloppy joey mixture.

Cook for 2-3 minutes or until the cheese crust is golden. Fold in half and cook until the internal mix is hot and gooey.

Add scrambled eggs for a breakfast version.

 

Aussie Lamb Tater Tot Casserole

Preheat oven to 425F.

Fill a 9x9 casserole dish with the sloppy joey mixture, shredded cheddar cheese, chopped red bell peppers and onion. Place an even layer of frozen tater tots directly on top.

Top the entire mixture with more shredded cheese.

Bake for 30 minutes or until golden and bubbly.

Serve topped with chopped green onions.
